Honey and garlic, a surprising combination to make at home

There are combinations that have stood the test of time because they are simple, and honey with garlic is one of them.
Two ingredients with completely different characters. The intensity and peppery note of fresh garlic combine with the sweetness, texture and aromas of good raw honey.
Preparing it at home requires no complicated techniques. All you need is 1 garlic clove and 1 tablespoon of raw honey.
How to make it
Peel the garlic and crush it lightly with the side of a knife or with a garlic press. Then let it rest for a few minutes and mix it with the honey. You can take the mixture directly or add it to a warm infusion.
If you want to prepare a larger quantity for use in cooking, increase the proportions while keeping approximately the same ratio. The mixture works particularly well in small quantities, where the garlic adds character without completely masking the aromas of the honey.
Another alternative is our Savory Honey with Black Garlic, which is already ready to use. When you make the mixture yourself, you can use a different garlic, whichever you like best, or control the quantity, but our ready-made honey delicacy is also fantastic for cooking or giving as a gift. Gourmet alert!
This combination can also be used as a base for:
Vinaigrettes
With extra virgin olive oil and a little vinegar.
Roasted vegetables
Add a small amount at the end of cooking or just before serving.
Marinades
The combination of sweet, intense and aromatic flavours works particularly well with meat and vegetables.
Cheese
A small amount of honey with garlic over an aged cheese creates a very interesting contrast.
Toast
For those who enjoy intense flavours, simply spread it over a good slice of bread.
The part that really changes the preparation is the type of honey we choose. We recommend a honey that is not too delicate because garlic has enough personality to easily overpower a flavour that is too subtle.
Nor do we recommend the most intense honey... the best choice is to find one with enough character without overpowering the garlic, and our choice is Raw Savory Honey, aromatic and complex, with a floral composition in which savory, thyme, holm oak honeydew, sage and lavender stand out above all. Its flavour is sweet and delicate, but with enough intensity to stand up to the garlic.
If you prefer an even milder option, Raw Rosemary Honey would be a good alternative. It is simply a matter of taste. Savory offers more character, while Rosemary honey is lighter.
