Natural oak honey has a very intense dark amber color and a rounded sweet, penetrating, malted flavor that evokes a fascinating woody sensation. Its aroma is intense and persistent with malted soot, gathering slightly flavored menthol sensations. It crystallizes sparsely, giving rise to a deeply dense honey.

It is harvested by bees during the end of summer, giving rise to a unique composition based mainly on rich honeydew, coming from the resinous secretions of oak (Quercus robur) as the most representative plant species, and to a lesser extent, the pollen and nectar of the flowers. heather (Erica sp), chestnut trees (Castanea sativa) and low-growing species.
