Honeycomb, also known as raw honeycomb, is one of the most authentic and traditional ways to enjoy honey. It is the honeycomb as built by the bees, composed of hexagonal wax cells filled with raw honey, sealed and naturally matured inside the hive. It has not been extracted, heated, or filtered, making it a direct expression of the bees' work and the environment in which they live. To our surprise, at Jalea de Luz, raw honey has been our best seller during the winter months of 2025-26, as raw honey is usually our top seller. We are delighted that our customers have discovered this product and keep coming back for more.

Unlike conventional liquid raw honey, bresca retains its original structure, protected by the wax, which helps preserve enzymes, aromas, and natural properties. This format allows you to appreciate not only the flavor, but also the texture and the character of the hive from which it comes.

At Jalea de Luz, the honey is obtained through sustainable, low-impact beekeeping practices, prioritizing the health of the hives and the balance of the environment. The hives are located in areas of great floral richness, where the bees collect nectar from wild plants native to the Iberian ecosystem. This results in honeycombs with complex aromatic profiles, which can vary depending on the bloom, the season, and the year. Each honeycomb is unique and reflects the territory from which it comes, making it a living, non-standardized product deeply connected to nature.

From a nutritional standpoint, bresca is especially valued for containing raw honey in its most original form, providing easily assimilated natural sugars, making it an immediate source of energy. Because it has not been subjected to heat, it retains active enzymes, antioxidants, and bioactive compounds that are lost in other industrially processed honeys. It has traditionally been attributed with antibacterial and soothing properties, particularly beneficial for calming the throat and digestive system.

Honeycomb wax, produced by the bees themselves, is a natural and edible material. When chewed, the honey is slowly released, offering a distinct and leisurely sensory experience. While some people choose not to ingest the wax and discard it after chewing, many consume it entirely as part of the product, as has been done in various cultures throughout history.

Consuming bresca is also a unique way to support artisanal and sustainable production methods. Its harvesting requires care and expertise, respecting the bees' natural cycles and ensuring the hive maintains sufficient reserves.
