Cheesecake with Raw Honey and Lemon juice

Here is a cake that is very quick to make, does not require an oven or extensive preparations and does not contain artificial ingredients. Stress-proof, laziness-proof and even perfect for children. Here is the recipe!
Ingredients:
- 1 jar of Philadelphia-style cream cheese, but any type of cream cheese will do.
- Fresh juice of 1 lemon.
- 2 sheets of flavorless and colourless gelatin.
- 1 or 2 tablespoons of Jalea de Luz honey, whichever flavour you prefer.
- 4-5 digestive biscuits, whole or crushed.
In a bowl, soak the gelatin in water for about 10 minutes to hydrate it, then throw away the excess water. Then put it in the microwave for 30 seconds at high power until it turns liquid.
In another bowl, mix the cheese, raw honey and lemon juice and finally add the liquid gelatin and mix until it forms a homogeneous paste.
In a medium size cake mold, about an open hand's width in diameter, oil the base and edges with a few drops of oil, just a few drops. We prefer oil to butter, olive oil or sunflower oil.
Place the crushed biscuits in a layer about half a centimetre high at the base of the mould. Or you can put the biscuits in whole and fill the gaps with crushed biscuit pieces. In the end, these biscuits will crumble and soften, so the result doesn't change much, it's just a matter of process preferences.
Pour the mixture of all the ingredients well distributed throughout the mould and leave it in the fridge overnight, or if you do it during the day, leave it for 4-6 hours. Your cheesecake with honey and a touch of lemon is now ready and you can enjoy a sweet moment without artificial sweeteners or refined sugars and respecting the properties of honey, since it is not subjected to high temperatures in an oven.
